Bread in Times of Quarantine

We are going through hard times with the corona-virus pandemic. It seemed far away when we heard the news, but it is a part of our daily lives. Now we are all home with uncertainty. We go to the supermarket and there are long lines in the shops and no food left to buy.

So, I was inspired to post this recipe. Several friends had asked me how to prepare bread. We are all scared of how difficult baking can be, however, this is so simple, rich, and with ingredients that we have in our home today.

This is very special for me because I do not like making videos and my daughter Hayllin tells me it’s very easy, so she recorded this video. It was a mix of nervousness and happiness during the filming, and I loved the result.

Here I present to you a recipe for soda bread. It’s very simple to prepare and has ingredients that we have at home. This bread does not use yeast or bread flour and doesn’t need you to wait hours for the bread to rise. This recipe is so simple, you’ll be enjoying the delicious bread in no time! Experiment with your children and put in any dry food like raisins, chopped dates, walnuts or olives.  Personally, I love black olives!

Few ingredients

Ingredients:

2 cups full of flour 

1 cup milk 

½ lemon 

1 teaspoon salt 

1 teaspoon of baking soda 

¼ cup cranberries ½ cup or any dry food of your choice

Preparation:

  1. Preheat the oven to 400°F (204°C)
  2. Mix the milk with the lemon and stir, wait about 5 to 10 minutes for the milk to curdle
  3. In a large bowl, mix the flour, salt and the baking soda
  4. Add the curdled milk to the flour and mix until it just holds together, so that there are no balls, add the dried food(s) and knead until everything is mixed
  5. Next, put the dough in a round shape on a tray with wax paper
  6. Sprinkle with flour to give the bread a rustic touch and cut a cross shape on top
  7. Bake for about 25 to 30 minutes. you’ll know your bread is ready when it is golden on top and when you hit the back it sounds hollow. Wait about 10 minutes to cool down and ENJOY!
