Riced Cauliflower with Turkey
Hello, I’m here again after a long time. Too much I would say. It’s been two years since I published two recipes and then I disappeared. Many things happened to children, home and work, but now I am willing to not give up and continue to offer new recipes that are approved by my children, who are my judges. If they say that they like it then it must be good. Ha ha ha.
For this recipe I’m using Riced Cauliflower! For me it’s so hard to change from the rice we eat it every day, but if we make a change to something healthier that the children like, then believe me when they do it will be on your menu every week. This recipe is like a base that you can add more vegetables or spices as you like. A single dish full of nutrients and low in calories and a very easy recipe that does not take long to prepare, and most importantly for us we do not need many pots. It is prepared in a frying pan. Now, don’t you think that I’m about to cut the cauliflower, nooo. There are a lot of alternatives in the market. The supermarkets have a fresh and frozen organic and I have used both and it comes out as good either way, so there we saved some time… I encourage you to try it, and let me know how you like it.
Recipe
1 Pound Riced Cauliflower
2 Carrots Diced
½ Diced Onions
1 Teaspoon of Garlic
1 Pound of Ground Turkey
½ Cup of Peas
Salt and Pepper to taste
Olive oil
Oregano
Preparation
1.- Cut the cauliflower and leave it in small pieces, now if you do not want to do this process you can use the food processor and in two minutes everything is chopped in the form of rice, likewise chop the carrot.
2.- Put a little olive oil in the frying pan, fry the onion until it has a little color, add the garlic, salt and pepper, add the meat and start to stir until it is cooked.
3. – At this time place the cauliflower and carrot in the fry pan and mix until everything comes together, taste the seasoning and add the oregano and peas. Keep stirring and cook about 5 to 10 minutes more until the cauliflower is tender. When tasting the vegetables should be soft and then you’re ready to enjoy this delight.
Variants:
– This recipe can add fried bacon and I cut it short at the end, it gives a very nice touch and you know everything is richer with bacon.
– Add other vegetables and cilantro.
